LGI Food!: Pumpkin Yogurt :)

 I LOVE AUTUMN!!! It is my favorite season! The colors, the fashion, the ability to bust out my sweaters, coats and jackets make me so happy!! The candles at the stores that smell of CHRISTMAS!! AHHHHH!!!!
This weekend Holly [#operationByeByeBelly] and I went to Chattanooga for the natural hair meet up Cocktails and Curls with Dominique of All Things O'Natural.(Take a look at Holly's recap of the event here)

The picture above truly looks like the hills and mountains me and Holly had to wind through to get there! Not to mention the Natty Moist conditioner/light body butter smells just like freakin' CHRISTMAS!! I just loooove autumn!

It is only proper that I provide you with a low fat-low calorie recipe when you need a autumn treat! This recipe comes from one of my pals over at MyFitnessPal, Ashley. She has a blog you can check out here that documents the journey of her "running to healthy". She has run THREE half marathons in 2011 alone and has logged 1269 miles...WOW!!!

For this recipe you will need:
Plain Yogurt 
100% Pure Pumpkin
Pumpkin Pie Spice
Truvia or Stevia

  1. Measure [6oz] 3/4 cup of PLAIN YOGURT
  2. Measure 1/4 cup of 100% PURE PUMPKIN
  3. Combine in a bowl with STEVIA and PUMPKIN PIE SPICE
  4. Stir until yogurt is consistent and light orange
  5. Add additional spice and Stevia to your liking
  6. Enjoy!!

    I used Greek yogurt but you definitely use plain yogurt if you don't get down with the Greek!

    After I mixed it and added the pumpkin spice, it really smelled like autumn. When I tasted it, it was a little too tart to my liking so I added more Stevia and Pumpkin Spice. It tasted great! But the crust taste was missing. I looked in the pantry for some graham crackers and found something better, GRANOLA!! Instant pumpkin pie taste!!

    Ohhh yeeeaa!!!
    Now culturally, I enjoy sweet potato treats in autumn so I would like to see how this would taste with sweet potato filling. Overall the smell and taste are nice plus the recipe minus the granola is 149 calories per serving which makes for a great snack and it took me about five minutes in all to make!
